The bakery and deli at the Prairie Sky Co-op Food Store are now open, with fresh-baked goods and deli selections available once again. 

"We still have some finishing touches that are still ongoing, as well as the sales floor portion, which will be a little bit later in the project," said Kevin Arthur, General Manager.

"Our customers have been really understanding and they know we had to do a lot of work to have a modern facility to meet their needs, so they were really good about it, but also excited to have us back in operation." 

"It's fully open, but say, something like our hot island that has chickens on the sales floor isn't in place, so you have to ask for it at the counter or get a cold one, but everything in the deli department is up and running."
 
He said the feedback expressed by customers has been that had missed the store's scratch bakery products and they're excited to have it all back. 

Things in the store are still in a bit of upheaval, though, with the refrigeration units along the north wall currently, which normally contain the cheese, yogurt, milk, and sliced meat, all removed, to be replaced with new ones. Arthur said this next phase should be complete by this weekend or next week. 

"That will be faster than when we changed our freezers out because a lot of the pre-work has been done," he noted. 

"We'll be continuing with other phases of the renovations for the next several months. So we just appreciate everybody's patience, and by summertime, we'll be completely finished and have a real modern store for everybody to shop at."
