A little over 50 days before gates open, the Calgary Stampede has unveiled more than 50 new Midway foods—including mopane worm poutine, dill pickle Coke and a Spam-stuffed bao bun.

The 2025 lineup was released Wednesday, with organizers promising bold creations, global flavours and revamped classics from over 70 vendors when the festival runs July 4 to 13.

"Our exhibitors spend months curating unexpected dishes that you won’t find anywhere else but at the Calgary Stampede Midway," said Ashley Warner, Midway Manager. "The goal is to surprise, delight and satisfy every kind of craving with an unforgettable Stampede twist."

This year’s menu includes Freaky Tzatziki Twisted Pickles, a crispy-shelled Ramenrito and Cowboy Candy Mango Soft Serve — a sweet and spicy dessert.

Drink offerings include Lava Flow Lemonade and Crocodile-Aid Buckets.

A naming contest returned again this year, asking Stampede Insiders to name a new bao bun creation from The Dumpling Hero — a Hawaiian-inspired mix of Spam, garlic shrimp, pineapple, cucumber, seaweed and teriyaki. More than 1,800 submissions came in. The winner: Spam-pede Bao.

"This year, we are thrilled to introduce a touch of Oahu to the Calgary Stampede Midway with our Asian fusion and Hawaiian staple creation," said Tracy Cheng, co-owner of The Dumpling Hero. "We are excited to transport you to the beach with a taste of Hawaii through the Spam-pede Bao, exclusively at the 2025 Stampede."

Traditional offerings are also being updated, with new additions like Nashville Hot Chicken Mac, Lobster Tornado Rolls and Deep-Fried Cinnamon Buns.

The 2025 Calgary Stampede runs July 4 to 13 at Stampede Park.
