So, yesterday was above 30 degrees, and the next few days bring more of the same. When it's this hot outside, it's easy to sit on the deck and have a nice ice-cold glass of water or iced tea(or beverage of your own choice). That's all good. But when it comes to cooking supper, the last thing I want to do is cook something.
I don't want to stand over a hot BBQ when it's already +30. I don't want to turn on the oven to further heat my house, which is already fighting for its life to have the AC keep up to the heat outside. Cooking hot food in extreme heat does not sound pleasant. So much so, that I just put it off until the last second, and then grumble when I have to do it.
But that leads me to my next problem; what the heck do I make as a cold supper that I and the rest of the family will eat?
I'm probably overthinking all of it, but my cold supper options are limited. Potatoe salad? Gazpacho? Which sounds cool to my kids by the way, until I explained what it is.
